Make Your Own Masala Chai Spice Mix

Makes 2 cups

If you do like to mix your own spices, start with 4 cloves, 3 green cardamom, Β½ inch cinnamon, 3 slices of ginger, one star anise and crush in a mortar. Add 1 and 1/2 tsf of high quality black organic tea – this mix will make two cups. Once you have your mix, follow any of the recipes below.

Ensure you only use high quality ingredients for maximum aromatic finish. As you become more experienced, you can vary the spice proportions to experiment.

Masala Chai (tea) recipe

Masala Chai or Tea is made by boiling tea, mix of spices in milk and water in right proportions. You can use any of our loose leaf products here.

Instructions: for 2 cups

1. Boil 1.5 cup water with 2 tsf of masala tea for 10 mts in high rim saucepan in medium low heat - reduce water to 1 cup or less. 2. Add 1.5 cup of milk to the brew (soy milk okay). 3. Keep on heat and keep stirring to reduce the liquid to less than two cups - switch off heat 4. Add non flavored honey or sugar as preferred. 5. . Strain and serve hot.

Masala Chai with TeaBags (without Milk)

Since teabags can not be boiled, we need to take a slightly different approach. Also, being of high quality, some of our customers prefer to enjoy it without milk.

Instructions: for 2 cups

Heat 2 cups of water in a saucepan (or in microwave), bringing to a boil. In two cups, put in a teabag each of our Premium 9 spices Organic Masala tea. Pour the hot water into the cups directly and cover it to retain the flavors – steep for 4 to 5 mins. Enjoy your tea directly from the cup. You can add sugar or non favored honey as per taste.

Green Lime Tea (Lebu Chai)

This tea is extremely popular street beverage in summer and is different from Lemon tea. The aroma comes from a special lime species - known as 'King of Lime' - Lebu stands for green lime.

Instructions: for 2 cups
1. Boil 2 cups of water. 2. Add two teaspoons of Lebu Chai into a tea pot and pour in the boiling water. 3. Add white sugar to taste. Let it steep for 4 to 5 mins. 4. Prepare two short glasses or cups - squeeze about 1/2 lime equally into each to cup. Take care not to squeeze the skin too hard. 5. Strain the brew into the glasses and serve hot.
